Hamburg’s cuisine is characterized by a variety of fish dishes, because of the former abundance of fish in the Elbe. Matjes or Bismarck herring, are salted or marinated and you can often find them in a roll, the so-called fish roll. Green herrings, on the other hand, are fried in a pan. By putting them in a vinegar marinade, a fried herring becomes a fried herring. At the beginning of the 19th century, smoked eel was already offered by street vendors in inns. Finkenwerder plaice is also considered typical of Hamburg cuisine. Fish scraps without heads are prepared as pan-fried fish together with fried potatoes, served with a mustard sauce. Carp is a traditional Christmas or New Year’s Eve dish.
